Peel the potatoes and cut to half lengthwise, and each half into 4 pieces lengthwise, creating wedges.
Put the wedges in a pot and cover with water.
Bring the water o boil, reduce heat, and cook for 10 minutes.
Warm oven to 450f (220c).
Drain the water and place the potatoes on a flat baking pan.
Drizzle olive oil and mix until the wedges are coated.
Spread the spices evenly on the top of the potatoes.
Put the pan in the oven and bake for 45 minutes, until golden. Flip the potatoes half way.
