P’titim (Orzo)

Basic recipe

Equipment

  • Wide pan with lid

Ingredients
  

  • 1 Onion
  • 2 cups Orzo or Israeli couscous
  • 2 cups Water (hot)
  • 1 tbsp Oil
  • 1 cup Vegetables (frozen mix) Optional. Peas, carrots and corn
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Chicken soup powder Optional

Instructions
 

  • Boiled the water.
  • Warm a wide frying pan or pot with some oil.
  • Chop the onion and add to the pan. Cook on medium heat until transparent.
  • Keep the heat on medium-low. Add the orzo and blend with the onion, until the grains are coated with oil.
  • Mix in spices.
  • Mix in vegetables.
  • Add boiling water, mix and cover with lid.
  • Cook on low heat for 7 minutes. Stir occasionally so the bottom would not stick to the pan.
  • Ready when there are no more water and the grains are soft. If the grains are not ready, add a little more hot tap water, and cook for a few more minutes until ready.
  • Turn off the heat and let sit for another 5 minutes.

Notes

Better serve warm, but can be served cold mixed with simple Israeli salad.
