Pancakes

Ingredients
  

  • 1 cup All-purpose flour
  • 2 tsp Baking powder
  • 2 tbsp Sugar
  • 1 Egg
  • 3/4 cup Milk
  • 2 tbsp Oil
  • 1 tsp Vanilla extract

Optional additions

  • 1/4 cup Chocolate chips
  • 1 tbsp Cocoa powder
  • 1/2 cup Blueberries

Instructions
 

  • Mix flour and baking powder into a bowl.
  • Mix in the sugar.
  • Mix in the eggs (you can beat them first if you like). Make sure they are well blend in.
  • Add the milk, oil and vanilla and mix to a smooth blend as possible, with no lumps or pockets of dry flour.
  • With a paper towel, brush a small pan with very little oil and warm on medium-high heat on the stove.
  • Once the pan is hot, turn down the heat to medium-low.
  • Pour two full spoons of the mix into the pan, With the back of the spoon, spread the mix a little in a circular motion.
  • When small bubbles are starting to form on the top of the pancake, flip it over for another minute or two.
  • When the second side is golden, remove the pancake from the pan and start again.

Notes

It’s important to mix the blend to be a smooth as possible so as not to get lumps of dry flour. The smoother the mix, the fluffier the pancakes would be. However, it doesn’t have to be perfect. 
No need to add oil between the units if the pan is warm enough.
Concentrate and don’t get distracted as the pancakes can be easily burned. If needed, turn the heat down a little.
You can double the quantities and keep the leftover pancakes tightly wrapped in the fridge overnight.
