Mix flour and baking powder into a bowl.
Mix in the sugar.
Mix in the eggs (you can beat them first if you like). Make sure they are well blend in.
Add the milk, oil and vanilla and mix to a smooth blend as possible, with no lumps or pockets of dry flour.
With a paper towel, brush a small pan with very little oil and warm on medium-high heat on the stove.
Once the pan is hot, turn down the heat to medium-low.
Pour two full spoons of the mix into the pan, With the back of the spoon, spread the mix a little in a circular motion.
When small bubbles are starting to form on the top of the pancake, flip it over for another minute or two.
When the second side is golden, remove the pancake from the pan and start again.
